  • My world is extra green today!
So happy to be making pesto from the ramps I foraged yesterday. 
Making the most of our beautiful planet. And we're really just scratching the surface of this beautiful jewel in our universe. Our planet is here for us, and we should be here for it. 
Happy Earth Day. 
Until I can post this, and if you have access to ramps, here's my recipe for 'Ramp and Pistachio Pesto':
3 packed cups roughly chopped ramp leaves
1/2 cup olive oil
1/3 cup pistachios
2-2.5 tbsp ramps whites
Combine these in a blender, and blend till smooth, using a tamper (I used my <a href=/user/vitamix/1>@vitamix</a>)
Add 1/2 cup freshly grated Parmesan cheese and 1 tsp kosher salt. Blend till smooth.
You can freeze in ice cube trays, or store in small jars if giving some away. Be sure to add a layer of olive oil over the pesto before closing the lid and storing in the fridge. 
This pesto is best thinned out with pasta water. Feel free to add hot pepper flakes etc when cooking up. 
I keep it neutral when first preparing it, especially if I'm gifting it.

  • It's really moody in Toronto today. But moody can be good. Like this moody tray of snacks brought back from exploring some of our rad Middle Eastern shops. 
Fresh almonds are drizzled with olive oil and sprinkled with salt (the centre jelly part is what actually turns into the nut!) such a short window for these- so happy that <a href=/user/kathythecheflady/1>@kathythecheflady</a> reminded us it was now!
Fresh, melt in your mouth dates are stuffed with toasted walnuts or goat cheese. And I found out that any uncut fresh dates can be frozen to retain their brilliance till needed. So happy! 
And that bread, it's Khubz Laham, an Iraqi flat bread stuffed with lamb, onions and parsley. Super addictive! 
I could eat like this all the time! You?!

  • Garlic breath is underrated. 
We're having Pasta with Garlic Three Ways from 'The Food Lab' by <a href=/user/kenjilopezalt/1>@kenjilopezalt</a> tonight. Along with simmering smashed whole garlic cloves in olive oil, then sliced garlic cloves and hot pepper flakes are added and quickly fried, and minced garlic is added to the oil at end. 
The game changer is how the pasta is cooked. You JUST cover the pasta with hot water and some salt, and then bring it to a boil. Stirring it gently at the beginning keeps the pasta from sticking. And because there is less water, the starches released really get into the water, making it amazing for adding to sauces afterwards. It goes against everything we've ever thought about how to cook pasta. Converted. 
Parm, thyme and rosemary added at the end. 
Now please pass a boatload of breath mints 😬

And I've got that Lemony Lemon Curd up on the blog. It's tart, fresh, and easy peasy to cook up. Heaps of zest and Lemon Bitters.

  • We didn't go out for brunch, but it sure feels like we did!
Extra Crispy Southern Fried Chicken from 'The Food Lab' by <a href=/user/kenjilopezalt/1>@kenjilopezalt</a> turned out WAY more moist than I was anticipating. I keep thinking I want a deep fryer, but the wok and an instant read thermometer worked perfectly. The spicy buttermilk marinade is wonderful. A couple of tbsp of this gets added to the dredging flour, along with lots of seasonings to make the coating 'extra craggy'!!
And the perfect bed for this crispy chicken is the Maple and Bacon Waffles, from earlier in the same cookbook. There's bacon in the batter. Yeah baby!

What better way to enjoy it than on these light and easy peasy Cream Scones from 'The Food Lab' by <a href=/user/kenjilopezalt/1>@kenjilopezalt</a> for the #rainydaybitescookbookclub. I threw in some fresh blueberries, 'cuz they just belong near lemons!

  • Strawbarb. Rhuberry. Whatever we call it, give me all the rhubarb! And strawberries!
Love making Jalousies. Kind of like a danish. The inside has a layer of yummy frangipani and a mix of fruit. And some rhubarb bitters, mint and thyme for extra oomph!
And yes, a slice is perfect for breakfast. Just saying...

    Strawbarb. Rhuberry. Whatever we call it, give me all the rhubarb! And strawberries! Love making Jalousies. Kind of like a danish. The inside has a layer of yummy frangipani and a mix of fruit.   • Getting my Green on!
This salad is inspired by the memorable Secret Dinner Party  that <a href=/user/torontolife/1>@torontolife</a> and <a href=/user/sonos/1>@sonos</a> threw back in February. 
<a href=/user/patrickkriss/1>@patrickkriss</a> created a salad that I couldn't get out of my head. I had to somehow get it onto a plate in my kitchen. It was the sea asparagus that clinched it. 
So this salad of cress, maiche, sea asparagus, cucumber, and avocado is a tribute to Patrick, and is on the blog now. The pear matchsticks are dipped in the shallot champagne vinaigrette to keep them from turning brown. And minced jalapeño and pistachios add some final crunch.
