I could write many love letters to pizza. This one is dedicated to my incredible friend Kerstin @curlew_and_dragonfly. She's hosting a #curlewshappiness party and I figured this vegan margherita pizza would make her happy because we shared the most delicious vegan pizzas last year when she was visiting NYC. ❤ I love Kerstin's approach to food, her photography that inspires happiness, and her infectious laugh. If you don't already know this spectacular woman, please go say hello today! ❤ Basic recipe for pizza: * Pizza crust of choice * 1/2 cup marinara sauce * Small handful of cherry tomatoes * Basil leaves, chiffonaded * Vegan mozzarella cheese @miyokos_kitchen * Cashew Parmesan cheese (pulse 1/2 cup raw cashews in food processor until you have a fine meal; add 2 tbsp nutritional yeast, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp sea salt and pulse until combined) * Extra virgin olive oil * Red pepper flakes ❤ Preheat oven to 375°F. Roll out pizza dough of choice into a circle on a greased baking sheet. Top with a thin layer of marinara sauce, add sliced cherry tomatoes, and dot with @miyokoskitchen vegan mozzarella cheese. Bake until dough is crispy and cheese is melty.
