Life is a combination of magic and pasta! - Federico Fellini 🍝 Another rainy day in San Diego and nothing is better than a warm bowl of pasta to comfort you on a cold rainy day. How are you my beautiful souls? I hope your weekend has been blissful. This evening, for dinner I made my very favorite pasta dish, linguini with sweet potatoes and chickpeas in a creamy lemon sauce. This pasta is full of amazing flavors. Sharing the recipe with you below. Enjoy your day! Lots of love, Zuzu 💕 Linguini with Sweet Potatoes and Chickpeas with Creamy Lemon 🍋 sauce Ingredients; 1 packet of whole wheat or regular linguini pasta Boil al dente according to directions in a packet. 2 tbsp of EVOO 1 medium onion chopped 2 cans of cooked organic garbanzo beans drained. 1 large sweet potato cut in small cubes. 2 gloves of garlic 1 tsp of chili flakes 1/3 cup organic vegetable broth Juice of 1 lemon Handful of parsley chopped Method: In a sauce pan, sauté onions with olive oil in a med heat for about 8 min or until onions are transparent. Add sweet potatoes and chili flakes and cook everything for another 5 min, add the chickpeas and the vegetable broth. Bring it to boil then add the minced garlic and lemon juice. Cook for 10 min in a med heat. Add the linguini and parsley to the sauce and toss. Add salt and fresh crushed black pepper.
