Root vegetables chips. We were snacking on these yummy chips this afternoon while watching #strangerthings. I did a #bodycombat class in the morning, sprinted to and from the gym to maximise my workout. I did not want to feel guilty sitting in front of TV later on. I try not to snack or have treats between meals. I do love healthy or healthier desserts but I like to eat these right after my food as part of the meal and then give my digestion a rest for a few hours. It is so easy to reach for a treat while watching TV. I therefore like to offer my family healthier alternatives. My Instagram friend @goodfood.sports.happyfamily made sweet potato chips a few months ago. She was my inspiration behind my root vegetable chips. I thinly sliced sweet potatoes, purple sweet potatoes, carrots, parsnips and pink beetroot and placed them in a bowl. Then I massaged them with a little bit of olive oil and placed them one by one on a baking sheet before putting them in a preheated oven at 180 degrees C. I baked them for 10 minutes, turned them around and baked for another 10 minutes. Some had to stay in the oven for 5 more minutes to get nice and crispy.
