  • Nettle, young garlic and basil pesto with red lentil pasta.
I love classic pesto and could eat it every day. But I also love to experiment with it and change the recipe. I have been incorporating nettle in my cooking these days. <a href=/user/riverford/1>@riverford</a> sent me a huge bag and I have already made a smoothie, tea and this vegan pesto from it. 
Stinging nettle has many health benefits. It helps with urinary and kidney problems, can reduce inflammation and detoxifies the body. 
For the pesto I blended the following:
1 cup young garlic (just like spring onions; picked from the garden; I used the entire stalks)
2 cups stinging nettle <a href=/user/riverford/1>@riverford</a> 
1 cup fresh basil
1 Tbs sesame seeds
4 Tbs toasted pine nuts
2 Tbs nutritional yeast <a href=/user/wholefoodsuk/1>@wholefoodsuk</a> 
2 Tbs cashew nuts pulp leftover from my cashew milk
Unrefined sea salt 
Pepper

  • Steel cut oats and buckwheat porridge with lucuma and cinnamon.
I cooked the oats and the buckwheat flakes in water with a pinch of Himalayan salt. Then I stirred in a Tbs of organic lucuma powder <a href=/user/naturya/1>@naturya</a>, a tsp of acai powder <a href=/user/therawchocolatecompany/1>@therawchocolatecompany</a> and a tsp of cinnamon <a href=/user/wholefoodsuk./1>@wholefoodsuk.</a>
Then came the toppings: banana, organic pumpkin seeds <a href=/user/nutriseeduk/1>@nutriseeduk</a>, berries, shredded coconut, toasted slivered almonds, aronia berries <a href=/user/aroniaoriginal/1>@aroniaoriginal</a>, more cinnamon and a tiny spoon of rice syrup.
Lucuma contains beta carotene, potassium, iron and zinc. It has a mildly sweet taste and therefore adds sweetness to the porridge without the need of sugar. If you are looking for products with natural anti-ageing benefits, like I am, then lucuma should definitely be on your list.

  • Relaxing after several hours of playing, running, making daisy chains and throwing balls. The English countryside is so beautiful! 
I like to exercise in my gym but I don't feel any guilt to skip a workout and just run around the fields with my girls and explore charming little English towns instead.
Keeping active is crucial to good health and rejuvenation but it does not have to be just the gym that offers this. There is nothing better than breathing fresh air!

  • A slice of chocolate peanut butter cake for breakfast?
Well, I made mine using just a bit of coconut sugar, erythritol and maple syrup with the main ingredients being nuts and tofu! It is vegan and very delicious! I posted a picture of the whole cake a couple of days ago; here is the recipe. First of all, I would like to thank <a href=/user/texanerin/1>@texanerin</a> for the inspiration and the crust recipe which I changed just a little bit. I also would like to thank <a href=/user/thespruceeats/1>@thespruceeats</a> where I found a recipe for a chocolate peanut butter pie which I adjusted for my filling.
I first greased my pie dish with some coconut oil <a href=/user/nutiva/1>@nutiva</a> and sprinkled it with ground almonds <a href=/user/wholefoodsuk/1>@wholefoodsuk</a>, while I was preheating the oven to 170 degrees C.
For the crust I combined the following first with a hand held mixer and then with my hands:
1/4 cup coconut sugar <a href=/user/sevenhillswholefoods/1>@sevenhillswholefoods</a> 
1/4 cup erythritol 
1/4 cup coconut flour 
1/4 cup raw cacao powder <a href=/user/adunaworld/1>@adunaworld</a> 
1/4 cup pure almond butter <a href=/user/meridianfoods/1>@meridianfoods</a> 
4 tsp melted coconut oil <a href=/user/nutiva/1>@nutiva</a> 
1 tsp pure vanilla extract <a href=/user/wholefoodsuk/1>@wholefoodsuk</a> 
1 flax egg
I pressed the mixture up the sides and over the bottom of the pie dish. Then I baked it for 12 minutes and left it to cool down for 30 minutes. 
For the filling I placed the following ingredients in a freestanding mixer:
1 packed drained silken tofu <a href=/user/clearspringuk/1>@clearspringuk</a> ( 290g or about 1,2 oz)
1 bar (100g) <a href=/user/greenandblacks/1>@greenandblacks</a> 85% chocolate melted in a double boiler together with 1 tsp of salt <a href=/user/cornishsea_salt/1>@cornishsea_salt</a> and 1 tsp of pure vanilla extract.
1/2 cup smooth pure peanut butter <a href=/user/meridianfoods/1>@meridianfoods</a> 
1/2 cup maple syrup
2 Tbs freshly made cashew milk.
After everything was well combined and the texture became really smooth, I placed the pie in the refrigerator for an hour while I was making the nest and the eggs. 
As chocolate contains important nutrients it should be included in our diet. It is better for our digestion to eat it in the morning!

  • Skin glowing face scrub.
I combined the pulp left from my almond milk (12 tsp) with a tsp of coconut oil <a href=/user/nutiva/1>@nutiva</a> and gently warmed it up. Then I massaged my face with it for about 5 minutes. It gives the skin such an amazing glow and softness. I massaged my mother, my sister and my daughter with it as well and everyone's skin was glowing. 😀
This is my first ever video. I am not great at this but I wanted to be real. I don't use any expensive products on my skin and I try to keep my beauty regime simple, effective, cheap but most of all natural. I make masks, cleansers and scrubs from food and essential oils. I have been dealing with grief and my skin suffered as well. My biggest problem is lack of sleep which I am trying to handle and I need to figure out what to do with the dark circles under my eyes. We all have stress, sadness, pollution and many other obstacles to prevent us from glowing. Luckily, we cook, we eat and there is a lot on our plate that could be used on our skin as well. What kind of food do you put on your skin?

  • Baked tomatoes, zucchini, spinach, spiralized sweet potatoes, eggs with pumpkin seeds.
I basically just cooked all of the above except the eggs in a little bit of olive oil in my skillet for 10 minutes. Then I added 4 raw eggs and seasoned it with spicy paprika, smoked paprika, salt, pepper, garlic powder <a href=/user/wholefoodsuk/1>@wholefoodsuk</a> and placed the skillet in the the oven preheated to 200 degrees C for 30 minutes; occasionally mixing the vegetables.
I served this with additional raw pumpkin seeds <a href=/user/nutriseeduk/1>@nutriseeduk</a>, fresh lemon and a huge bowl of probiotic sauerkraut <a href=/user/bionaorganic./1>@bionaorganic.</a>

So many people are celebrating holidays these days. Lao New Year started today and the celebrations will last several days. I was part of this a few years ago and ended up soaking wet with flour, ashes and paint all over myself. This picture was taken in Luang Prabang. It was so much fun! 
I was reading an article in Natural Health magazine about the lengthening of telomeres and anti-ageing. One of the ways we can fight the shortening of our telomeres is smiling! If this is true, then in those 2 days I spent celebrating Lao New Year my telomeres grew very long!

  • Almond milk and amaranth porridge with a lot of cinnamon.
I have been craving sweets again and one way of dealing with these cravings is eating cinnamon. Of course, I need to address the reasons behind these cravings as well, but starting a day with a bucket load of cinnamon should help. I used amaranth and almond milk for this porridge because almond milk does not contain lactose and amaranth is gluten free. Both of these facts are important to consider when you are trying to deal with sugar cravings. Amaranth is also very high in calcium, iron, phosphorus, carotenoids and protein. All of these are essential to a good rejuvenating diet. 
I boiled 1/4 cup of amaranth grains <a href=/user/hollandandbarrett/1>@hollandandbarrett</a> in a cup of almond milk with a small pinch of salt for about 10 minutes.     Almond milk and amaranth porridge with a lot of cinnamon. I have been craving sweets again and one way of dealing with these cravings is eating cinnamon. Of course, I need to address the reasons behind these cravings as well, but starting a day with a bucket load of cinnamon should help. I used amaranth and almond milk for this porridge because almond milk does not contain lactose and amaranth is gluten free. Both of these facts are important to consider when you are trying to deal with sugar cravings. Amaranth is also very high in calcium, iron, phosphorus, carotenoids and protein. All of these are essential to a good rejuvenating diet. I boiled 1/4 cup of amaranth grains @hollandandbarrett in a cup of almond milk with a small pinch of salt for about 10 minutes. I blended the following:
1 cup of organic Greek yogurt by Rachel's organic
A handful of each raspberries, strawberries and blueberries 
1/2 banana

Yogurt is one of the probiotic foods I eat daily. My dairy consumption has dramatically decreased in the last years but I am not allergic or intolerant to lactose so I do eat probiotic dairy in small amounts.
Berries are so important for rejuvenation. I wrote about this in my previous posts. And regarding the aronia berries, they are not as sweet as some other berries and are very rich in antioxidants and vitamin C. They are a bit hard when they are dried but they soften in smoothies.
I love adding Moringa powder and bee pollen to my breakfast dishes instead of vitamin and mineral supplements as they are both very rich in many of those, especially calcium, magnesium, iron and vitamins E, A and Bs.
I bought this really nice raw pollen honey at the market and I add it to some of my breakfast dishes. It has quite an intense flavour which I love.

  • Hot sesame noodles
I have been reading about <a href=/user/deliciouslyella/1>@deliciouslyella</a> in the Natural Health on my flight back home, and looking at her peanut satay, which I am definitely going to recreate, I thought of my hot sesame noodles. We are obsessed with hot sesame noodles from this tiny little place in NYC as they taste heavenly. The recipe for those is a family secret and I am sure it is loaded with everything that would make my skin cringe, my bowel churn and my thighs jiggle so I have been trying to recreate my own healthy version. 
I think that when you clean up your diet, when you cut out everything processed and digestion clattering, you should never go on a journey of punishment and make food for yourself you despise. I always try to adjust my favourite recipes and there are many healthy recipes I will never touch as they are not appealing to my senses. I really believe that the food you eat needs to be not only healthy and palatable, it has to look appealing to you. I have never been a social media kind of person but I see now how <a href=/user/instagram/1>@instagram</a> is a great platform for people to realise that healthy does not mean boring and disgusting but the opposite!
Recipe:
I boiled a bag of organic rice noodles <a href=/user/wholefoodsuk./1>@wholefoodsuk.</a> I dissolved about 3 Tbs of <a href=/user/bionaorganic/1>@bionaorganic</a> creamed coconut in a cup of hot water, brought it to boil and turned the heat off. Then I blended the following :
1 cup of freshly made rich almond milk 
3 heaped Tbs of <a href=/user/meridianfoods/1>@meridianfoods</a> peanut butter
1 Tbs of toasted sesame oil <a href=/user/clearspringuk/1>@clearspringuk</a> 
1 fresh chilli 
1 Tbs Braggs Aminos <a href=/user/wholefoods/1>@wholefoods</a>
1 Tbs rice syrup <a href=/user/clearspringuk/1>@clearspringuk</a> 
1 Tbs of dark tahini sauce <a href=/user/wholefoodsuk/1>@wholefoodsuk</a> 
Thumb size of fresh organic ginger <a href=/user/riverford/1>@riverford</a> 
I poured this into the coconut cream, heated it up just a little and mixed in the noodles. I served the noodles with a sprinkle of sesame seeds, dried chilli flakes and a tsp of liquid aminos.
The mixture gets nice and thick as it cools down.

  • Almond milk and apples sourdough bread dessert.
As children we used to make this bread dessert using really soft bread, milk and white sugar and it was called zemlovka. It was eaten more like a main course rather than a dessert in my country which is not something I do now. I tried to recreate the traditional recipe using spelt sourdough, almond milk and a combination of erythritol <a href=/user/wholefoodsuk/1>@wholefoodsuk</a> and coconut sugar <a href=/user/sevenhillswholefoods/1>@sevenhillswholefoods</a> and served it for our Sunday brunch.
First I greased my dish with a little bit of coconut oil and preheated the oven to 220 degrees C. I cut about 4 slices of spelt sourdough into squares and dipped them in the mixture of a cup of freshly made creamy almond milk, 1 Tbs of erythritol, 1 Tbs of coconut sugar, 1/2 a tsp of vanilla powder and left it to soak. I separated 2 eggs, whisked the yolks with a Tbs of erythritol to a creamy consistency and combined it with the soaking bread and grated 5 apples. I spread half of the bread on the bottom of the dish, following with the grated apples and the rest of the bread. Then I drizzled it with a Tbs of date syrup <a href=/user/meridianfoods/1>@meridianfoods</a> and placed it in the preheated oven for 15 minutes. In the meanwhile I whisked the whites with a tsp of erythritol and a tsp of beetroot powder <a href=/user/bioglanuk./1>@bioglanuk.</a> I spread this over the dessert and baked it in the oven at 180 degrees for 10 more minutes. Then we served it with a bit of maple syrup and raspberries.

My little 5 year old niece wanted a Nutella toast, so she helped me make this healthier version for breakfast this morning.
We just combined the following:
1 cup of hazelnuts soaked overnight 
3 Tbs of freshly made almond milk

70g of <a href=/user/greenandblacks/1>@greenandblacks</a> 85% chocolate (melted)
Pinch of Himalayan salt
1 Tbs of local raw honey

  • Spinach and wild garlic soup.
My mother has been making spinach soup for us all our lives. 
We still had some wild garlic left so we decided to add it to the spinach soup. I always have it with  an egg for some protein and a little bit of lemon juice for better absorption of iron.

  • Dandelions, wild garlic, black kale and sorrel salad.
I came to visit my mother this week to help her in the garden. My day today consisted of hours of gardening, including sawing off a couple of huge apple tree branches, going for a run around the village and finishing off iwith a village HIIT class! It is amazing that they offer free fitness classes in my little village and anyone can join! 
I also made this giant salad which we ate as a side dish to my mother's oyster mushrooms pasta.
For the salad I combined the following:

Dandelion leaves <a href=/user/riverford/1>@riverford</a> 
Wild garlic from the meadow 
Sorrel from the garden

  • Cooking with simple home made wild garlic pesto.
I came to visit my mother with a bag full of <a href=/user/riverford/1>@riverford</a> organic vegetables which I intended to eat before my flight but I was not able to. My mother had just made this amazing wild garlic pesto by combining the leaves with olive oil and unrefined sea salt.
Wild garlic has antibacterial properties and it contains a lot of vitamins and minerals, such as C, A and iron. Of course a lot of the health benefits get lost during the cooking process but it does add a really nice flavour to your food. For my dish I used the garlic in 3 ways. I cooked with the pesto, added some fresh pesto to the meal after it was cooked and I used the wild garlic leaves in the salad.

After 20 minutes, I took the mushrooms and the zucchini out of the oven and baked the potatoes for 10 more minutes.     Cooking with simple home made wild garlic pesto. I came to visit my mother with a bag full of @riverford organic vegetables which I intended to eat before my flight but I was not able to. My mother had just made this amazing wild garlic pesto by combining the leaves with olive oil and unrefined sea salt. Wild garlic has antibacterial properties and it contains a lot of vitamins and minerals, such as C, A and iron. Of course a lot of the health benefits get lost during the cooking process but it does add a really nice flavour to your food. For my dish I used the garlic in 3 ways. I cooked with the pesto, added some fresh pesto to the meal after it was cooked and I used the wild garlic leaves in the salad.   • Rejuvenating smoothie for breakfast.
1 small papaya
1/2 mango
1 passion fruit
1/2 banana 
little bit of lime
1tsp ashwaghanda powder 
1tsp psyllium husk powder
1Tbs baobab <a href=/user/adunaworld/1>@adunaworld</a> 
1Tbs rice protein powder <a href=/user/pulsinandbeond/1>@pulsinandbeond</a> 
For the toppings:
1tsp bee pollen 
Handful of macadamia and almonds
Coconut flakes
Banana 
Lime 
This smoothie is packed with rejuvenating, skin and gut loving nutrients, antioxidants and natural immune boosters.
As well as eating a lot of probiotic food I make sure that I eat a lot of fibre. Psyllium husks contain soluble fibre which aids regular elimination. I have an afternoon flight to catch and before every flight I try to do my best to eat the right food to avoid any possible digestive issues.
Ashwaghanda is used often in Ayurvedic medicine for its many benefits. It is an adaptogen and I have been occasionally taking it to balance my hormones. It helps to reduce inflammation and stress so I thought it would be useful for me to have some of it today. 
Baobab and bee pollen are little wonders. They are full of many essential nutrients and they also ad extra flavour to the smoothies.

Nettle, young garlic and basil pesto with red lentil pasta. I love classic pesto and could eat it every day. But I also love to experiment with it and change the recipe. I have been incorporating nettle in my cooking these days. @riverford sent me a huge bag and I have already made a smoothie, tea and this vegan pesto from it. Stinging nettle has many health benefits. It helps with urinary and kidney problems, can reduce inflammation and detoxifies the body.
