  • Lemon matcha energy truffles. I will post the recipe for these later on. I made them to share with some of my favourite instructors in my gym, which is sadly closing down. I have spent 11 years there and I will really miss it. Thank you @sitdownaj and @hellohelenyoga for your guidance, my flexibility and firm butt 🙂❤️ I used @purechimp lemon matcha and they turned out to be really delicious. At my last barre class with @sitdownaj we had a little good bye party and I suddenly saw a familiar face walking trough the door, beautiful Rosie @missnutritionist. This was the first time I met someone I only knew from Instagram before. She was a member in my gym as well and I did not even know. It was lovely to talk to her and share my truffles with her.   • Spa time. I think the autumn is really here now. And because I miss summer and the warm sunshine I am craving a nice spa time. The best spa I have ever visited was at the @sixsensesninhvanbay where I took this picture. I really wish I was there now but since I am not, I am going to make my own home spa today.   • Organic tomatoes from my mother's garden. Tomatoes are a great anti ageing food. The main reason for this is lycopene which can reduce mitochondrial damage to the skin and protects it from premature ageing. The amount of lycopene increases with cooking but fresh tomatoes are yummy and contain enough minerals, vitamins and other nutrients for them to be considered a superfood. They are a great source of vitamin C, molybdenum and biotin which are all important for healthy looking skin.   • Vegan chocolate peanut butter pie. This is my favourite vegan chocolate cake. It has a yummy chocolate moose like consistency and I posted the recipe for it before. Good quality chocolate, raw cacao beans, powder, nibs or cacao mass offer a lot of nutrients. Chocolate is a great source of magnesium, which helps to combat stress, anxiety and can even ease muscle cramps. The best time to eat chocolate is early in a day, when we can use all the energy from it. As it is a stimulant, we should not eat chocolate in the evening. Any excuse to have more chocolate works for me.   • Creamy macadamia wild rice mushroom risotto. I am so proud of this one! It turned out to be so creamy that nobody noticed there was no dairy in it! It was hard to take a good picture of it because risotto is not very photogenic and people (and dogs) kept asking for it, as I was trying to take a good shot. I ended up with a small bowl. I served it with this mathematically most perfect Fibonacci vegetable, romanesco cauliflower from @riverford which was just very lightly steamed so it preserved its crispness. Recipe: For the macadamia cream I blended the following: 2 cups of oven roasted patty squash (roasted just with a bit of olive oil) 2 cups of water 1/2 cup of macadamia nuts soaked for 5 hours Pinch of Himalayan salt 1 Tbs of nutritional yeast @wholefoodsuk This makes about 3 cups. Risotto: 1 chopped onion cooked in a Tbs of olive oil for 5 minutes 1 cup of rinsed mixed wild rice @waitrose (added to the onions and cooked while stirring for 5 minutes) 2 cups of water After adding the water, I cooked the rice for 20 minutes. Then I added 3 handfuls of chopped organic mushrooms (mixture of oyster, shiitake and coral mushrooms I bought at the market) 2 cups of the macadamia cream 1 tsp of turmeric 2 cups of chopped organic French beans @riverford 1 tsp of ground pepper 1 tsp of unrefined sea salt @wholefoodsuk 3 cloves of garlic I cooked everything together for 20 more minutes, threw in a bit of chopped parsley @riverford, took it off the heat and left it covered for about 10 more minutes.   • Buckwheat coconut matcha porridge parfait. I made a really quick porridge by cooking 1/2 cup of @clearspringuk organic instant porridge with buckwheat, coconut & flaxseeds with 1/2 cup of amaranth flakes, 1/2 cup of shredded coconut @wholefoodsuk and 1 1/2 cup of freshly made almond milk. I added a pinch of Himalayan salt, a tsp of maple syrup and cooked it for 3 minutes. Then I stirred in 1 tsp of @purechimp matcha tea. I layered the parfait with the porridge, banana shapes, passion fruit, a bit more of the shredded coconut, maple syrup and matcha. This was the first time that I served my porridge like a parfait and added matcha to it and I loved it!   • Quick buckwheat porridge and a lot of fruit for breakfast. I soaked some raw buckwheat in water overnight and then I cooked 1 cup of it in freshly made almond milk with a pinch of Himalayan salt and a Tbs of maca powder @rainforest.foods, 1 tsp of cacao powder @adunaworld and a scoop of vegan chocolate protein powder @nutristrength. I just quickly warmed and stirred everything up because I wanted to eat the porridge warm but didn't want to overheat the ingredients. I also added a Tbs of chicory inulin powder to aid my digestion and make my healthy gut bacteria happy. Finally I stirred in a tsp of @bionaorganic brown rice syrup which adds sweetness but is considered to be one of the healthiest sweetener by many because it doesn't contain fructose. I served my porridge with @pipandnut peanut butter, amaranth pops @wholefoodsuk, chia seeds @sevenhillswholefoods, organic walnuts and berries @tescofood.   • Jackfruit and red wine tomato sauce with buckwheat penne. I was experimenting with jackfruit a little bit as it is really nutritious. This was one of my creations. I used delicious @clearspringuk buckwheat penne and it turned out to be a yummy and nutritious dinner. Recipe: 1 chopped red onion cooked in 2 Tbs of olive oil 1 cup of organic red wine @wholefoodsuk 1 cup of fresh jackfruit 2 cloves of garlic 1 can of chopped tomatoes with basil @bionaorganic 1 chilli 2 tsp of dried organic oregano 1/2 cup of fresh basil I added the jackfruit to the onions and cooked it for 10 minutes. Then I added the wine to it and cooked it for another 10 minutes. After this I added the canned tomatoes, fresh chilli, garlic, oregano and continue to cook the sauce for another 10 minutes.   • Story of jackfruit no.2 We took a shelter from the heat of Hoi An and cruised along the river with captain Dan. It was an experience we will never forget. Not only because being on water felt refreshing and because Hoi An architecture is beautiful and the river offers a different perspective on this picturesque town. Captain Dan will have a place in our hearts forever. If you are ever in Hoi An, take a boat ride with him and you will see. He even shared his lunch with us- freshly picked jackfruit from his garden. It was the perfect refreshment on a hot humid day. While I was in Vietnam, I experienced a lot of generosity.   • Blueberries. I will have these beautiful intensely delicious blueberries for my breakfast today. I brought them home from my mother's garden. My sister is growing some in the flowerpots on her terrace which inspired me to plant my own. Blueberries are heavily sprayed with pesticides and it is much better for us to eat the organically grown blueberries or, even better, wild. Even the flavour is so much better!   • Savoury breakfast. My mother made this baked vegetables and sourdough dish for me on Sunday because she was making a chicken stuffing and wanted me and my daughter to have some non meat alternative on the table. It was so yummy, that I even had it for breakfast. I prefer sweet breakfasts in general, because I do have a sweet tooth 🙂, however, every now and then I do enjoy a savoury breakfast. This one was perfect. Recipe: First we soaked 4 slices of dry homemade sourdough bread in freshly made oat milk while we prepared the vegetables. We greased the dish with a bit of coconut oil @nutiva and sprinkled it with homemade sourdough bread crumbs. We gently cooked chopped courgette, aubergine and pepper from the garden in a bit of olive oil. Then we added one egg yolk to the vegetables together with cut soaked bread and mixed everything together. We whisked the egg white until we had a soft peak and added it to the mixture. Then we seasoned everything with salt, pepper and fresh parsley. We baked it in the oven for about 30 minutes.   • As school has just started again and a lot of children will experience exam anxiety I would love to share my experience as a mother with all concerned parents. But first, I would love to congratulate my amazing daughter @hannahhannahbobannabanana on her incredible GCSE results. I am really proud of her, especially because we did not have a good year as a family and I was not able to offer her all of the support she deserved. It is not only the results I am proud of (yes, it feels great to see the ocean of A* on your child's report) I am mainly proud of her overcoming her exam anxiety and handling the exams with calm. Even though I was not around as much as I should have been when she was studying as I had to take care of my sick father, my daughter found her own strength. That is what I am most proud of. Giving your child the right nutrition when they study is important but I also think this is not the time to implement any strict nutritional rules; allow your children some treats, as long as the main meals are nutritious, as anyone who is studying needs to feed their brain with the right nutrients. As for supplements, I believe that the right supplements in the right time are great but this is really individual. I offered my daughter only one supplement when she was studying: @pukkaherbs Illuminate capsules which contain organic herbs, like brahmi. I believe that these helped my daughter to concentrate.   • My gluten free buckwheat and amaranth granola with dried berries and activated nuts. Activated nuts are easier to digest, so I soak the nuts for my granola. I dehydrate the granola on very low temperatures to preserve most of nutrients in the nuts and seeds. I don't really believe in a recipe for granola. I just combine whatever I have, like any open porridge cereals and nuts. Then I either add chocolate or berries, whatever I feel like. This time I soaked 2 cups of nuts (almonds for 8 hours, cashews, Brazil nuts, hazelnuts for 4 hours). I soaked 1 cup of mixed sunflower seeds and pumpkin seeds @nutriseeduk for 4 hours. In a large bowl I mixed the following: 2 cups of @clearspringuk organic instant mega porridge with buckwheat, coconut & flaxseeds 1 cup of amaranth flakes 1 cup of buckwheat flakes 1/2 cup of rice flakes 2 Tbs of chia seeds @sevenhillswholefoods 2 Tbs of linseed 1 Tbs of sesame seeds 1 cup of quinoa pops @wholefoodsuk 1 cup of amaranth pops Then I added the soaked seeds and mixed everything together. I chopped the soaked nuts and added them to the mixture as well. Finally I added the following: 1 tsp of scraped vanilla bean 1 tsp of vanilla extract 1 tsp of Himalayan salt 4 Tbs of @bionaorganic rapeseed oil 2 Tbs of melted coconut oil @nutiva 4 Tbs of @bionaorganic rice syrup 3 Tbs of @meridianfoods date syrup 2 Tbs of maple syrup 1/2 cup of each dried raspberries and blueberries @traderjoes I mixed everything together and placed it in the oven set on the lowest temperature (about 60 degrees C). I left it there for about 6 hours. I stirred the mixture gently and continued to dehydrate it for 3 hours. Then I turned the temperature a bit higher (to about 100 degrees C), just for 10 minutes before turning the oven off and left the granola in for about 2 hours, until it became crunchy. Every oven is different and you might need more or less time.   • Beautiful fresh grapes! My neighbour in Slovakia brought these to me and I could not stop eating them. Delicious and each colour tasted a bit different! It is better for our digestion to eat sugary fruit (like grapes) in the morning. This way we use the sugar to fuel us and not clog us 🙂. Grapes are really nutritious and contain a lot of important phytonutrients. They have many anti ageing properties. I love grapes with seeds, as they contain omega 3, vitamins A and E. Of course, the seeds should be chewed properly to get the benefits and make them easier to digest. September is a month celebrating organic food. Grapes are on the list of the most dirty fruit and vegetables as they get to be sprayed with a lot of pesticides.   • Protein waffles with local and tropical fruit. I made these for my family. I am sure that a lot of my friends in here are trying to convince their family to eat better and make better choices but it isn't always easy to beat the years old habits. Substituting white wheat flour and refined sugar with healthier alternatives, adding more fruit, vegetables and herbs to the meals is the best way to start. I added wholegrain spelt flour and protein powder @pulsinandbeond to these and sweetened the batter with @meridianfoods molasses and @clearspringuk rice syrup.   • Never too old to climb trees! I am visiting my family in Slovakia again and love walking and running around my little village. Jumping, climbing and hopping in nature is my favourite kind of fitness. We spotted this tree on our family walk/ kind of run. And we could not resist climbing it.   • Healthy snack. Buckwheat and sesame crackers. I made these back in London when I was experimenting with new @clearspringuk buckwheat range. They turned out to be really delicious! Perfect healthy nutritious alternative to the usual crackers or chips/ crisps. I mixed the following together in a bowl, before kneading the mixture in to a dough: 1 cup of buckwheat flour @clearspringuk 1/2 cup of ground flaxseed 1/2 cup of mixed black and white sesame seeds 1/2 cup of nutritional yeast @wholefoodsuk 1 tsp of Himalayan salt 2 tsp of turmeric powder 1 tsp of black pepper 2 Tbs of thick homemade almond milk 2 Tbs of toasted sesame oil @clearspringuk 2 Tbs of organic cold pressed rape seed oil I pressed the dough on the bottom of a baking tray lined with parchment paper and baked it in the oven preheated to 180 degrees C for about 20 minutes. #justaddbuckwheat #organic #OrganicSeptember #organicfood #vegantreats #eeeeeats #plantpowered #beautifulcuisines #befitfoods #healthyfood #crackers #feedfeed #f52grams #delish #ChooseOrganic#cleaneats #cleaneating #eatclean #fitfood #fitmom #food4thought #paleosnack #buckwheat #healthylifestyle #healthyrecipe #healthyfoodshare #fitover40

Lemon matcha energy truffles. I will post the recipe for these later on. I made them to share with some of my favourite instructors in my gym, which is sadly closing down. I have spent 11 years there and I will really miss it. Thank you @sitdownaj and @hellohelenyoga for your guidance, my flexibility and firm butt 🙂❤️ I used @purechimp lemon matcha and they turned out to be really delicious. At my last barre class with @sitdownaj we had a little good bye party and I suddenly saw a familiar face walking trough the door, beautiful Rosie @missnutritionist. This was the first time I met someone I only knew from Instagram before. She was a member in my gym as well and I did not even know. It was lovely to talk to her and share my truffles with her. R.I.P. @printworksclub!
