  • CHICKEN AND POTATO BAKE - What do you do when life gives you a potato harvest of over 35kgs? You immediately toss some in a tray with chicken maryland pieces, onions, fresh lemon thyme, fresh rosemary, juice of a lemon (then add in the lemon halves themselves), sea salt flakes, freshly ground black pepper and extra virgin olive oil to make a sensational lunch!! After pulling out all the spuds this morning, it was brilliant to enjoy the fruits of our labour with a meal that was so delicious yet required a minimum of effort - my hands were just too sore from digging them out to make much more.   • SWEETHEART PAVLOVAS - On all special occasions in our home, I have to make sure there is at least one chocolate free dessert so that my older non-chocolate eating daughter (crazy right?!? 😞😞) can join us at the table. For Valentine's Day dinner last night, these beautiful mini pavlovas were simple, elegant and delicious. The meringue was piped into a cute heart shape, then filled with vanilla mascarpone cream, homemade honeycomb and finished with spicy roasted apricots and a drizzle of syrup from the baking pan...a sweet treat for one of my sweethearts!!   • VALENTINE'S DAY ROCKY ROAD - In my mind it's just not right for Valentine's Day to go past without a delectable treat...and this rocky road was definitely delectable! Made with homemade honey macadamias, Greek biscotti (aka paximadia, also homemade), freeze dried strawberries, marshmallows and glace cherries, all swirled through the perfect partnership of dark and milk chocolates, it was love at first taste! The ground freeze dried strawberries on the top were the final touch to make this sweet dream that little bit more lovely.   • RAW RASPBERRY WALNUT TART - I've been wanting to try make a raw tart for so long now and, I tell you, it was an absolute success!! Soft dates, cacao powder and oats formed the basis of the tart case, maple syrup replaced sugar for sweetness, the soaked walnuts and almond/ coconut milk made for a lovely cream filling and fresh berries provided a little tartness and that pop of colour to complete this dessert. I guarantee there'll be plenty more raw desserts to come out of this kitchen!   • ALMOND BASIL PESTO - With Valentine's just around the corner, I thought it was high time to get together some ideas for dinner and dessert for hubby...and then my 10 year old asked, Mum, what are we doing for Valentine's dinner? 😂😂 In that moment, I realised that the most important thing to celebrate that day is, simply, love ❤❤ To me, this means spending quality time with hubby and the kids - eating a delicious meal we all enjoy, followed by a little something sweet, then lounging about and catching up with each other...well this is the plan for this and the next few Valentine's Days until they grow up and give hubby and I the boot!! Till then though, a meal like this one would be perfect. 
The delicious sauce is made by whizzing together 50g roasted almonds, 1 1/2 cups fresh basil leaves, 2 medium garlic cloves, 1/2 cup shredded parmesan, sea salt flakes and freshly ground pepper (to taste) in a food processor until it's all very finely chopped. Then add 1/3 cup extra virgin olive oil in a slow and steady stream with the processor still running until the oil is well incorporated. To finish it off add 1 teaspoon of lemon juice and pulse 2 or 3 times to mix it in. Serve by stirring through your favourite pasta (in this case, <a href=/user/barillaaus>@barillaaus</a> casarecce pasta) and also feel free to add a little fresh ricotta and cherry tomatoes to jazz the dish up even more. Thank goodness there's a jar of these beauties in the fridge to satisfy those sweet cravings!   • MINI CARROT CAKES - To celebrate the end of the first school week of the year, and the fact that all my kids are now at school (the little one started kindy this week 😊) I thought I'd surprise them this afternoon with one of the few cakes they all love...the humble carrot cake. Made with oat flour and almond meal, layered with a light mascarpone frosting, a salted caramel sauce by <a href=/user/maggie_beer>@maggie_beer</a>, and sprinkled with candied nuts, I've no doubt they're going to love it!! On a side note, thank you all for your patience the last couple of months - chasing after the kiddies over this long hot summer break meant there was only limited time for this Instaworld...I've really missed it. Now I've had a couple of days to myself, I can't wait to get into the swing of things again.   • TOMATO AND FIG SALAD 🍅🍅- One of my goals this year is to eat many more salads, less bread (the Greek genes in me have now gone into a state of shock 😯😯), and to grow as many of our own veg and herbs as possible. With such a long, hot, summer upon us, this goal has been surprisingly simple so far as we can't keep up with harvesting tomatoes, cucumbers, zucchinis, peppers, chillis and beans at the moment...and the herbs are so fragrant and plentiful. We're collecting bunches of oregano, basil, sage, thyme and parsley and hardly making a dent in their supply!! If I had to name a favourite though, it would have to be the heirloom tomatoes that are thriving in this heat, becoming sweeter with every day that they remain on their vines. This salad showcases them perfectly. The tomatoes and fresh oregano are straight from our patch, the figs bought directly from their grower, the fresh ricotta from a local cheesemaker, the aged balsamic vinegar in the dressing a gift to us from a producer (and cousin) in Melbourne, and the extra virgin olive oil also in the dressing is from the family's groves in Crete. I've collaborated with <a href=/user/csrsugar>@csrsugar</a> to develop a modern version of this classic dessert in celebration of Australia Day tomorrow. This beauty was the result - a classic vanilla bean meringue in the shape of a rectangular tart case, filled with lavender whipped cream, a blueberry port sauce and completed with a sprinkling of fresh blueberries and baby mint leaves.   • SUMMER CHEESECAKE - One evening last week I toyed with the idea of trying to lighten up the cheesecake without taking away any of its deliciousness...and this was the result! I whizzed about some plain bikkies with butter for the base and then substituted the standard cream cheese with ricotta, custard and milk to create a smooth, lovely and creamy vanilla bean filling. After refrigerating overnight, the cheesecake was topped with fresh raspberries, the last of the blueberries we picked from the mid-north coast, and cooled jelly liquid. It was again left alone in the fridge for a few hours for the jelly to set... and voile, I introduce you to my summer cheesecake!     SUMMER CHEESECAKE - One evening last week I toyed with the idea of trying to lighten up the cheesecake without taking away any of its deliciousness...and this was the result! I whizzed about some plain bikkies with butter for the base and then substituted the standard cream cheese with ricotta, custard and milk to create a smooth, lovely and creamy vanilla bean filling. After refrigerating overnight, the cheesecake was topped with fresh raspberries, the last of the blueberries we picked from the mid-north coast, and cooled jelly liquid. It was again left alone in the fridge for a few hours for the jelly to set... and voile, I introduce you to my summer cheesecake!   • My younger self would be mortified at what I'm about to confess...I cannot wait for autumn to come round!! The heat has just been relentless this summer with the temperature hitting the mid-30's again today (about 95 Fahrenheit). All day we just watched movie after movie - it was a High School Musical, Star Wars, and George of the Jungle extravaganza! Seeing as though no one really felt like eating, I made these banana trifles/ layered banana splits using bananas we bought straight from a banana farmer when we were up at the mid-north coast.   • GINGER, PISTACHIO AND HONEY MARSCAPONE LAYER CAKE - It's almost midnight and I can't sleep - although it has cooled down a little, it's still too darn hot in Sydney tonight! With a flat chat week on the cards I thought I'd take advantage of the quiet and finalise typing the recipe for this beautiful cake. It was shot at a Christmas photo shoot with <a href=/user/the_life_style_edit>@the_life_style_edit</a> a few weeks back but really it's perfect for a get together or special occasion any time of the year. With two layers of ginger cake (inspired by a gorgeous recipe by <a href=/user/bromabakery>@bromabakery</a>), a single  pistachio cake in the middle and lashings of honey mascarpone frosting keeping it all together, it really is deliciousness personified!   • BAKED OCEAN TROUT - Talk about a gorgeous looking, delicious dinner after such a hot day!! I placed a whole side of ocean trout on a lined oven tray and topped it with thinly sliced garlic and baby fennel, lemon slices, sea salt flakes and freshly ground pepper before drizzling quality olive oil over it all. After the fish had been baking for about half an hour, a bunch of asparagus (with each stalk cut in half) was scattered over the fish and the tray was returned to the oven for 10 more minutes. Along with a couple of slices of quality bread, this is my idea of a perfect lunch!! CHICKEN AND POTATO BAKE - What do you do when life gives you a potato harvest of over 35kgs? You immediately toss some in a tray with chicken maryland pieces, onions, fresh lemon thyme, fresh rosemary, juice of a lemon (then add in the lemon halves themselves), sea salt flakes, freshly ground black pepper and extra virgin olive oil to make a sensational lunch!! After pulling out all the spuds this morning, it was brilliant to enjoy the fruits of our labour with a meal that was so delicious yet required a minimum of effort - my hands were just too sore from digging them out to make much more. Despite the effort in harvesting, potatoes have to be one of my favourite things to grow - it's so satisfying seeing how many potatoes form from a single tuber and they taste so deliciously different when they're fresh from the garden - a definite paddock to plate success story!!Plenty of potato goodness coming up in the coming days!👧😉😊 #mummascountrykitchen #chickenpotatobake #paddocktoplate #farmtotable #growyourown #seasonaleating
