Shredded kale mix + quinoa + salmon (seasoned with paprika + salt & pepper + parsley + lemon & olive oil, baked on 400 for 15-20 min) + turmeric cauliflower + sautéed kale & strinf beans in liquid aminos + <a href=/user/seapointfarms/1>@seapointfarms</a> dry roasted edamame

  • I obviously had to bring my white paper background on my trip, and a wooden bowl, and my <a href=/user/kitchenaidusa/1>@kitchenaidusa</a> mini food processor, and then obviously had to make hummus 💁🏻
Recipe: 1 full can of chickpeas, with the liquid included, do not rinse (set aside 1/4 cup for topping) + 1/4-1/3 cup tahini (depends on how creamy you want it) + juice from half a lemon + 1 garlic clove + 1 tspn cumin + salt & pepper to taste.
Blend everything in a food processor or blender until smooth. Top with warm chickpeas, paprika, olive oil, hard boiled egg & grilled eggplant

  • We just finished up a sunset dinner on the beach 😍and are digging into these Almond Butter Brownies I made us, which we may or may not top with cookies & cream ice cream 🙃🍫
recipe: 1 cup natural almond butter + 1/3 cup agave/maple syrup + 2 tbsp cocoa powder + 1 flax egg (1 tbsp flax whisked with 3 tbsp water) OR 1 whole egg + 2 tbsp soy/almond milk + 1/2 tspn vanilla extract + 1 tspn baking powder
Mix everything until smooth. Fold in <a href=/user/enjoylifefoods/1>@enjoylifefoods</a> chocolate. Pour into an 8 by 8 pyrex lined with parchment paper and bake on 350 for about 15 minutes

  • Tahini Kale Caesar with Crunchy Chickpeas 🌿 I worked from home today and got to enjoy my salad in its original white bowl 😜and now I'm off to pack because I'm leaving to Grenada Thursday to see my babe after 2 long months 😍😍
Tahini dressing: 1/3 cup tahini paste + 1/4 cup water + juice from 1 lemon + 1 minced garlic clove + 1 1/2 tspn dijon mustard + 1 tbsp olive oil + 1 tbsp nutritional yeast + pinch of cumin + + salt & pepper to taste (makes 4-5 servings) 
Chickpeas: drain and rinse 1 can of chickpeas. Mix with olive oil, smoked paprika, cumin, salt & pepper and roast on 450 for 20-25 minutes

  • The snow may be back but it looks like the perfect time to bake these Oatmeal Peanut Butter Muffins 🥜so soft and delicious, the perfect little sweet something with my morning coffee 🤗
Recipe:
1 1/4 cup oat flour (about 2 cups oats blended into flour) 
1/2 cup natural peanut butter or almond butter
1/2 cup cashew milk (or any milk)
1/4 cup apple sauce
1/3 cup + 1 tbsp coconut sugar
1 egg
1 tspn baking powder
1/2 tspn baking soda
1 tspn vanilla extract
1/2 tspn salt
1/4 cup dark chocolate chips
Whisk together all wet ingredients.  Mix in the baking powder, salt, and baking soda to the oat flour. Add the dry mixture into the wet and mix until well combined. Fold in 1/4 cup dark chocolate chips or a crushed bar of dark chocolate. Bake on 350 for about 25 minutes.
