  • Homemade Pesto Zoodles with slivered almonds and pumpkin seeds 
Pesto
2 cups fresh basil leaves
1/4 cup extra virgin olive or nut oil(if too thick you may need a bit more oil )
1clove of garlic 
Splash of lemon juice
Salt and pepper to taste 
Whizz all in a food processor or blender until smooth 
Zoodles
2 medium courgettes spiralised 
Pesto sauce as above
Pumpkin seeds
Slivered almonds
Salt and pepper to taste

Heat up a TBSP of nut oil in a pan . Add courgettes and stir through until  hot . 1-2 minutes. Stir in pesto . Top with fresh basil leaves , pumpkin seeds and slivered almonds .

  • How simple is this ! Broccoli and egg hash .... I had some left over broccoli from last nice so decided on a quick meal . One pan cooking .Heat up some nut oil in pan . Add the cooked  broccoli , break 2 /3 eggs on top, handful of chopped coriander and spring onions , salt and pepper to taste . Pan should be on medium heat. Stir it all together until eggs are done and broccoli heated through.   • Cauliflower rice chicken biryani with spinach . Topped with tomatoes , coconut, spring onions , raisins, almonds and fresh coriander 
Ingredients for 2 people
2cups cauliflower rice
350gm chicken diced
1 small onion diced
1clove garlic diced
2 handfuls spinach
Coconut oil
1 1/2 TBSP curry powder
1 teaspoon cumin
1tsp ground coriander
Splash of coconut milk
Salt and pepper to taste 
Garnish with raisins,coconut , flaked almonds spring onions and chopped coriander 
Method 
1. Chop cauliflower and place in blender a bit at a time to rice the cauliflower
2saute onions and garlic in 1 tbsp coconut oil
3. Add curry powder, cumin and ground coriander
4 stir through till onions are translucent
5 add chicken until browned
6add the cauliflower rice and 150ml water and splash of coconut milk. Stir through until cauliflower rice and chicken are cooked through 
7. Stir in soinach till it wilts
8 top with above garnish

  • Cauliflower rice risotto made with sautéed  onions ,garlic ,chopped spinach and courgettes  in nut oil ...with  cashew milk ....salt ,pepper and chilli flakes . Inspired by my chat with Alisön at the health food shop today . First time using cauliflower rice and I love it .used my vitamix to rice the cauliflower 
Ingredients
1head medium cauliflower
1diced up courgette
Handful of soinach
1chopped onion
1chopped garlic clove
1cup cashew milk or coconut milk
Salt, pepper and chilli flakes

Method
Rice the cauliflower in your vitamix or foodprocessor. Cut the cauliflower in small chunks and place in the blender a little bit at a time to rice it . 
Sautéthe onion, and courgettes in a tbsp of coconut oil .
Add cauliflower rice and stir through
Add the cashew milk and stir through till the cauliflower is soft / al dente
Stir through the spinach until wilted .
Season with salt, pepper and chilli flakes 
Enjoy 😊 
Tips - if mixture seems too dry add some boiling water or more cashew milk . More cashew milk makes it creamier 
You can also add diced chicken to the mixture while cooking for added protein .
