  • Trying to change up the end of season tomato spam with this Fried Green Tomato Sandwich. My plan is to knock it over, make a big messy salad out of it and grab a fork and knife! Here I toasted really great sourdough from @shewolfbakery and layered them up with assorted end of season heirloom tomatoes, sliced apple and hakurei turnip, fresh baby and micro greens from @windfallfarms. I blended some zucchini relish with vegan mayo and Sriracha for flavor and kick.   • Picked up three pints of tomatillos at @unsqgreenmarket yesterday. I roasted them with a jalapeño and toasted some pumpkin seeds. Fresh herbs, onion and garlic confit also went in along with olive oil, splash of cider vinegar and some bread and butter pickles (a whim that worked). Into a high performance blender it all went.   • Here's a delicious plateful for some Sunday dinner inspo. You'll still find great and wonky Heirloom tomatoes at the market (I love them this time of year), so grab some and make this! 100% Buckwheat Penne (so, so good!) with Heirloom Tomatoes, Fresh Herbs and Goat Feta. One pot, one spoon and one bowl and you've got a delicious meal! I'll post a recipe to the blog soon, but in the mean time... chop up a handful of assorted end of season heirlooms (doesn't need to be pretty- perfect for cutting out inedible imperfections from the tomatoes), several glugs of good olive oil, handful of torn basil, parsley and whatever you like, generous chunks of goat Feta, flaky sea salt, fresh ground pepper and a squirt of lemon and garlic if you like. Toss all together in a large bowl and allow the flavors to meld and the tomatoes to release some of their sweet water. Cover and set aside at room temp. This can be done a couple of hours ahead of time. Prepare Penne per package directions (if you can't find buckwheat, other whole grain or gluten free pastas will be fine), cooking until al dente. Reserve a cup of the cooking liquid, drain and toss hot pasta into bowl with tomato and Feta mixture. Adjust seasoning and splash in any cooking water if needed. Grab a fork and enjoy!   • One of my favorite gazpachos includes peach, so I decided to try the two in a (gf) galette! I used an assortment of heirloom tomatoes and white Peach and laid the slices in a bed of goat ricotta. The flavors play off of one another beautifully! (all from @unsqgreenmarket) I do need to work on the crust a bit before I share the recipe. I think going buckwheat may be even better!   • I made these Seedy Soba Noodles with Asian Herbs and Sweet Ginger Dressing from #neighborhoodcookbook by @arthurstreetkitchen. Added to this delicious tangle is the season's first Delicata squash and baked tofu (how to below⬇️). Day two (I made a ton of this because I love it) I added roasted Miso Salmon and a splash of rice vinegar. How to for the Baked Tofu: (formal recipe coming soon!) Choose firm or *Extra Firm organic Tofu Whisk together (as tho you're making a dressing- quantities are to taste): *grape seed (or neutral flavored) oil, *rice vinegar, *mirin, *tamari or soy sauce, *Vietnamese chili sauce (the one with the green cap) and a splash of *sesame oil. Add Tofu to an airtight container and cover with marinade. Allow to sit overnight or longer, turning occasionally to coat the block evenly. Slice about 1/3 thick and lay in a single layer in a parchment lined baking sheet. Hit your favorite farmers' market this weekend and stock up on the end of season wonders that simmer together magically to create this delicious Provençal vegetable stew! . *ratatouille (the verb): \ rä- tä- tü- ē, Chop, stir and blend. Prep fresh zucchini, eggplant, onion, pepper, tomato and fresh herbs. Sautée, season and caramelize each component. Simmer and stew together with herbs and seasoning. Enjoy warm, room temperature and/or cold. Trying to change up the end of season tomato spam with this Fried Green Tomato Sandwich. My plan is to knock it over, make a big messy salad out of it and grab a fork and knife! Fried Green Tomatoes (a video how-to and recipe can be found at @thefeedfeed feedfeed.com/tv, search feedtheswimmers Fresh from the Markets) are simple to make and so delicious. Here I toasted really great sourdough from @shewolfbakery and layered them up with assorted end of season heirloom tomatoes, sliced apple and hakurei turnip, fresh baby and micro greens from @windfallfarms. I blended some zucchini relish with vegan mayo and Sriracha for flavor and kick.
