Healthy Strawberries and Cream Stuffed Crepes ~ This is perfect for #valentinesday!❤️🍓🥞 The best part is they are super easy to make!! Add any fruit and toppings you or your loved ones like! ~ for crepes 2 very ripe banana, peeled 2 large egg 1/2 tsp baking powder 1/2 cup organic whole wheat flour or try oat flour 1/2 cup almond milk for filling 1/2 cup fat-free Greek yogurt 1 tbsp agave strawberries, sliced and chopped For topping Strawberries Muesli Instructions Blend in a blender all ingredients for the crepes until very smooth. Blend until no lumps. Heat coconut oil or butter in a large nonstick skillet set over medium heat. Pour in 1/4 cup of batter, and immediately swirl the pan to coat the bottom. Cook until the top looks dry and the bottom is light golden brown, about 3-4 minutes. Gently run spatula around the edges of the crepe to loosen it. Carefully flip crepe with your hands and cook on other side for 30 seconds. Transfer crepe to a plate. Repeat with remaining batter. The kids don’t prefer the yogurt so I spread over only 3 crepes. However filled all with the strawberries. Roll crepes, and serve topped with the chopped strawberries, filling, and muesli. Enjoy!
